Somewhere across the globe, in the far reaches of northern India, there are searing-hot clay ovens baking Tandoori Roti Naan: there are pots simmering with richly-favored sauces and the aroma of fragrant spices permeates the air. Here, in the city of Johnston, a similar scene unfolds nearly every day at the region’s newest dining sensation, The Punjab, home of authentic Indian cuisine that rivals any other found in the area.

Dining at this warm and inviting restaurant is a sensory and culinary journey, from the moment one steps into its amber-lit dining room to one’s very last bite of food whose flavors linger in your mouth like a dream. The restaurant is the passion of owner and restauranteur Jatinder Vij; the food is the passion of its chef, Subash Singh. Together, these two brothers have brought the beauty and tastes of their homeland to our corner of the world ~ and they have done so in an unforgettable way.

The Punjab features hand-painted murals which resemble a delicate henna tattoo. The walls are bathed in burnt umber color and are lined with jars filled with vibrant spices ~ turmeric, coriander, ginger, curry, cumin and tamarind. From the kitchen where Chef Singh, a chef of 22 years, is cooking come the tantalizing smells of marinades and sauces which he has combined to create dishes that will leave you wanting more, every time. The Punjab is experienced by every sense, taking diners to a place which lures them back, over and over again.

When Chef Singh prepares food, he is inspired by the rich flavors, textures, cooking techniques and history of his culture. He creates classic dishes like Chicken Curry, Baigan Bhartha (delicately smoked eggplant), Lamb Rogan Josh (lamb soaking in yogurt and spices), Goat Vindaloo (with just the right about of heat) and Gobi Manchurian (Roasted Cauliflower). His Naan, like everything else at this restaurant, is made right on the premises. It is baked in a 550-degree oven, giving it the perfect char and puffiness. There are mouth-watering appetizers, seasoned rices, biryanis, kebabs ~ both traditional and new. The menu is lengthy, diverse, easily customized and topped off with refreshing Lassi’s and popular Indian desserts.

The Punjab has been open since early November of 2018, but it is not the first restaurant of Jatinder and Subash who owned an Indian restaurant in Massachusetts for close to a decade. When Johnston beckoned, they answered the call and have now made our city their new home. One must simply come here to see, taste and experience it for yourself.
